In the China Alta village of Ibagué, Tolima, Finca Los Aguacates stands as a living testament to a tradition passed down from generation to generation. Luis Ernesto Nieto Cacais is part of the third generation of coffee farmers in his family, a heritage built with love for the land and a commitment to excellence in coffee. From a very young age, Luis Ernesto learned the secrets of coffee farming alongside his father. Although he had the opportunity to study, he chose to follow his true vocation: cultivating coffee and perfecting each stage of the process, from harvest to fermentation. This choice, far from being a renouncement, became the best decision of his life, one he has reaffirmed with every coffee bean he harvests. Over time, he has not only preserved the traditional methods taught by his father but has also experimented with new varieties and processes, always striving to improve the quality of the coffee he produces. His goal has been clear: to stand out in the production of specialty and high-quality coffees, demonstrating that dedication and constant learning are key to specialty coffee farming. Being a finalist in this competition is not just a personal achievement for Luis Ernesto, but the fulfillment of a dream forged with effort, discipline, and love for coffee. Grateful to God and his parents for instilling this passion in him, he continues working with the same dedication that has led him to stand out in the world of specialty coffees.
